400g trimmed broccoli
250g unsalted butter
3 egg yolks
Juice of 1 lemon
Pinch of cayenne pepper
2 teaspoons wholegrain mustard
1 teaspoon chopped tarragon
1 teaspoon chopped chives
To make hollandaise sauce, melt butter in pan
Heat water in separate pan till simmering.
Put egg yolks, lemon and cayenne pepper into bowl and set on top of pan to heat.
Whisk till slightly thickened.
Whisk in butter into mixture till sauce is thick and glossy.
Stir in mustard and herbs and season with salt and pepper.
Cook broccoli in pan of salted water till tender then drain and refresh under cold tap.
Alternatively, if not barbecuing, heat a ridged griddle pan till very hot and cook broccoli until charred on both sides.
