Recipe for blueberry ginger cookies: 3.8 oz vegan margarine 6.5 oz brown sugar 1.75 oz granulated sugar 1 tsp vanilla extract 1 tsp ginger 1/2 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt 5 oz white flour 2 oz wheat flour 2 oz oats 1/4 cup milk .5 cup dried blueberries .25 cup minced crystalized ginger Cream the butter with the sugars until fluffy. Add extract and ginger spice. Combine the dry ingredients and beat into the butter mixture. Stir in the blueberries and crystalized ginger. Bake at 350 degrees for 15 minutes. Cool on baking rack for 10 minutes.
