Some people insist on filtering, others are proud to avoid it - You decide. Most white wines are filtered prior to bottling, and some reds are. Filtering can clarify a wine so that it sparkles in your glass, but if you filter too heavily it can strip character from the wine. We’re sitting at the brand new winery in the Tedo river valley, overlooking the terraced vineyards along the river and the Douro region impressively steep slopes. We are talking about the red wines and about the future of the Douro wines. Niepoort’s four main red wines are Vertente Tinto, Batuta, Redoma and Charme. They also make a new-old red wine called Robustus that is made in an old-fashioned style aged longer in wooden barrel. Luis Seabra is clearly someone who likes to experiment with different wines, different grapes and different vineyards. There is plenty to material to choose from: there are 40,000 hectares of vineyards, 100 different grape varieties for the reds and 80 different grape varieties for the whites. So, what will happen in the ten coming years? Luis thinks it is the great challenge of the Douro! For example improving the quality of the wines, but also in quantity, producing wines both of quality and in quantity; perhaps not always going the easy way. Louis speculates in the future strategy and emphasises that the key is to keep true to the origin of the vineyards, while at the same time avoiding doing too much work in the wine cellar: the wines must be allowed to express their origin, soil and grape material. We also draw some parallels with Priorat in Spain and learn some lessons from their mistakes. And one should not forget the port wines in the Douro; Niepoort is above all a port wine company and without the port wines the Douro would not be the same. Her name is Ntsiki Biela and she is one of the very few coloured women wine makers in South Africa. The winery is close to the town Stellenbosch which is also the name of the wine region. The vineyards are quite a bit a way from winery. The name Stellekaya means home of the stars. Most of the wines are named after astrological star constellations (Capricorn, Taurus, Scorpio, Orion etc). They only make red wines, blends and varietals. They have cabernet sauvignon (called Scorpio), merlot and shiraz. The make several blends: sangiovese, merlot and cs (called Hercules), Bordeaux style (cs, merlot, cab franc), Cape blend with merlot, cs and pinotage. Often highly rated by John Platter in the Platter guide. The wines are generally very elegant with a lot of fruit. Ntsiki Biela, the wine maker wants to have the fruit prominent with a lot of freshness. Ntsiki has been winemaker since 2004. Over the years her wine making has changed, improved, learning from experience. There are always changes depending on the vintage but the style with fruit and elegance remains the same. Making wine was not originally something that Ntsiki Biela had thought of doing. Her first taste of wine was a strange experience: it was horrible, why would anyone want to drink this, she thought. She had the opportunity to study viticulture and vinification so she came to study at the Stellenbosch University on a bursary. She has since been named Woman Winemaker of the Year. Ntsiki comes from KwaZulu-Natal where they grow sugar cane, bananas but no grapes. Today she is one of the rare coloured female winemakers in South Africa. The balance between pH and acidity is a delicate one that you must pay close attention to as you are making wine. The ripeness of the fruit and type of grape varietal will dictate how you have to work with that fruit to produce a wine that meets your desired style goals.

Fining can be used to clarify and soften wines. Fining is the process of clarifying and stabilizing a wine. A fining agent is mixed in to bind with particles suspended in wine that would make it appear cloudy when poured into a glass. Since fining agents are slightly heavier than wine, the bound particles precipitate out and settle to the bottom of the tank. Sometimes you might fine a wine to clean it up if it is cloudy, other times you might wish to soften the wine by precipitating out compounds that are astringent. Most red wines won't need fining but whites benefit from the process so they remain crystal clear as they age in the bottle.
