Paris-Brest is a traditional pastry of French origin, in the shape of a crown, it is composed of a pastry stuffed with cream praline chiffon, sprinkled with flaked almonds. The creation of this pastry is attributed to Louis Durand, a pastry chef of Maisons-Laffitte, who designed this cake in the shape of a bicycle wheel, to celebrate the Paris-Brest-Paris cycling race.
